Just been having a look at after hours quotes on some stocks where the prices are significantly up on the close.

In general, will these stocks start in tomorrow's pre-market where they leave off in tonight's extended trading ?

Often they do start pre-market on the following day not too far away from the end of the previous post market trading.
However, there are two main factors here.
a) Large spreads, 30-50 cents, so the first print might be away from the previous day, but "within range" so to speak.
b) News, up/down grades etc released between the last post market close and the new pre market open and they may cause much larger differences.
Don't even think about some form of trading strategy based on this! Post and pre market trading require experience and more art than analysis as you are usually, not always, dealing in a thin market.
