How would determine the open interest on a futures contract, so ill trade only the most liquid ?

The exchanges report that info along with volume. Most data feeds or reporting for futures include that data.

Bear in mind that the most liquid are not necessarily the ones with the most open interest.

Also, if you need to ask this question you probably don't need to worry about liquidity much ;)

Listen to arabianights zulu89!
Probably you are looking for the average contracts traded by day, not OI.
Sometimes happens to be a high OI and very little 'action' during the session.

Anyway... somebody knows how to get OI data in real time?
What Rhody Trader says is EOD reports or monthly volume reports, right?

Yup, you can't get OI in real time... and it's not unusual for OI to be amended either due to backoffice errors..
