How do investment banks go about recruiting for their prop desk (assuming they are)? Are they normally from internal employees or do they go to graduate fairs and pluck straight into the prop desks?

Well it depends if you are talking about someone such as a person new to trading, then no bank will start a graduate on a prop desk, only the best and experienced traders at banks who have served there time and been repetedly profitable get moved onto the prop desk, I've heard its normally a minimum of 4-5 years before they even consider it.

different paths exist. One guy started serving the coffee full-time and after 2 years is now trading.
It is not impossible.
